Low cal/ low carb breakfast: huevos con nopales

Nopales has been part of Mexican diet and has been believed that it will lower blood sugar and thus regulate insulin. It is low in carbs and calorie but in addition of being low glycemic, it is also nutrient packed and low fat. Plus it taste really good.

For today I used 5 whole eggs, 1 cup of freshly cut nopales, 1/2 cup of onions and 1/2 cup green bell peppers 2 garlic cloves. Sauté in a little onion with garlic, add nopales and bell pepper for a minute, then add the beat egg and 1/2 cup of chopped cilantro. This will make 2 servings.

I served it with some whole milk yogurt and 1/2 cup of strawberry

  1. Is it pretty easy to prep the nopales after you buy them from the store? I had it a couple times in restaurants but haven't tried making it myself yet.

  2. This nopales were from HEB. They are sold in small plastic bags already cleaned of spines and cut in small dice pieces ready to be used for the recipe. I have no idea how to clean the nopales and would not have attemped to use them if they weren't already cleaned
